Introducing The Chef’s Series at Diamond Lodge

We are excited to announce that we have joined forces with Le Foo Frog, a brand new company created by Chef Patrick Parmentier, to bring San Pedro it’s very own Chef’s Series!

Food has always been a big part of the Diamond Lodge experience so we are hugely excited to announce a new culinary adventure taking place at Diamond Lodge on the first Friday of every month.

Beginning on Friday 7th September the Chef’s Series – kicking off with the Fall Series - will offer a brand new family-style fine dining experience to residents and visitors to San Pedro. Every opportunity to dine will feature 5 unique courses, specially designed by Chef Patrick, paired with fine wines from around the world and exceptional service. As the seasons change, so will the focus of the menus as Chef Patrick takes us on a journey of the seasons, with each month featuring a specially-designed menu focused around fresh seasonal ingredients with a European flair. The ‘Fall Series’ will run from September to November, before the ‘Winter Series’ kicks off in December.

Tickets are on sale now for our first event which takes place on Friday 7th September at 7pm. This first event 'A Taste of France' will feature a 5-course Fall Harvest with French flavors close to Patrick's heart, paired with wines from the corresponding regions of France. Tickets must be purchased in advance and places are limited to an intimate 14 people so are available on a first-come-first-served basis! A little about Chef Patrick Parmentier…

 Chef Patrick is a graduate of L’Ecole Hotelier de Nice in France and holds a management certificate from the American School of Hotel and Restaurant Management. He first began his career cooking in some of the finest restaurants on the French Riviera, where he helped Le Chateau de La Chevre d’Or secure their 1st and 2nd prestigious Michelin Stars. He then took his talents to Los Angeles where he worked as a catering partner for the 1984 Summer Olympic Games. He has previously owned two successful restaurants in Southern California, launched restaurants in Texas and California and was Dean of Culinary and Academic Programs for the esteemed L’Ecole Culinaire in Central US. Chef Patrick moved to Belize in 2016 and has been an active member of the F&B scene in San Pedro and Belize ever since, recently acting as a Judge for Taste of Belize, a competition held every 2 years to discover the finest Chef’s and Bartenders in Belize. Until this year he was Head Chef at French Touch in San Pedro but has now realized his dream of creating his very own catering company Le Foo Frog – loosely translated to mean The Crazy Frog – in order to introduce a new level of private chef services to San Pedro, Ambergris Caye and beyond. We are hugely excited to have the opportunity to work with him!

Therefore we do ask that if you do have any specific requirements that you let us know upon booking so we can do everything we can to try and accommodate you. We require pre-payment for the tickets and should you need to cancel we require a minimum of 48 hours notice, unless we have a waiting list and can transfer the tickets to another guest. Finally, due to the exclusivity of these events we require a minimum of 10 people to run the dining event, therefore, though it's unlikely, there may be last minute changes. We will always do our best to avoid this. Last, but not least, this is an adults-only dining event!
